Loosely based on my grandmothers family pickling recipe. This shrub uses local cucumbers and spices to strike a balance that is spiced, yet sweet; herbaceous, yet refreshing. It works as a ready to go vinaigrette/ mignonette or a wonderful alternative to pickle juice in recipes. Can greatly enhance the flavors of your gin and tonic or even make a wonderful light beer shandy. This shrub is an integral part of the "CBM" cocktail at Terra in Eataly Boston.




East meets West

1/2 Dozen East Coast Oysters (preferably MA or ME)

2 oz Cucumber & Spice Shrub

1 shallot, diced

Cracked black pepper to taste

- Soak shallots in Cucumber & Spice shrub for at least 10 minutes

- Add cracked black pepper just before serving

- Drizzle over raw or grilled oysters


Get it on the Greek

1 Cucumber

1/2 Red onion

4 oz Feta/ Cotija cheese

Kalamata Olives

2 oz Cucumber & Spice Shrub

1/2 pint  Cherry tomatoes

- Slice cucumber into rounds and onion into strips

- Combine with cheese and olives

- Dress with Cucumber & Spice Shrub

1/2 Dry Vermouth

1.5 Dry Gin
